Description
This wine is made from Melon de Bourgogne - 20% grapes from the Domaine and 80% purchased fruit from organic vignerons in the region. After 12 hours of maceration on the skins, Pierre-Henri ferments the wine in concrete tanks using indigenous yeast.
The resulting wine is mineral driven with bright, citrusy flavors.
